Easy and Delicious Homemade Chicken Noodle Soup Recipe

Cold winter days call for cozy evenings on the couch watching a movie with the family and taking a sip of the best chicken noodle soup there is — grandma’s. However, we know you can’t always call her over and ask her to make the delicious brothy concoction, so making it at home with simple ingredients is the next best alternative. Better yet, this recipe is as simple as it is delicious, and there is no prep work the day before. This tasty, nutritious, and easy chicken noodle soup recipe will have your belly full and happy in no time! 

 
Prep Time: 10 minutes 

Cook Time: 45 minutes 

Total Time: 55 minutes 

*This recipe makes about six servings. 

 
Ingredients: 

 
2 tablespoons unsalted butter 

2 tablespoons olive oil 

1 ½ cups chopped large onion 

2 cloves minced garlic 

½ lb. sliced and peeled carrots 

3 stalks sliced celery 

1 ½ lbs. boneless and skinless chicken thighs, cut into 2-inch chunks 

5 cups low-sodium chicken broth 

½ cup KAL Nutritional Yeast Flakes 

Salt, to taste 

Ground black pepper, to taste 

3 round slices fresh lemon, seeds removed 

¼ teaspoon ground turmeric, optional 

8 ounces egg noodles 

¼ cup fresh parsley, chopped 

Freshly grated Parmesan cheese, to taste 

 
Instructions:  

 

  1. Melt the butter and oil in a large pot over medium heat. Once the butter is melted completely, add the onion, garlic, carrots, and celery. Stir and cook until the onion is softened and translucent. 
  1. Add the chicken thighs, chicken broth, nutritional yeast, salt, black pepper, lemon slices, and turmeric. Bring to a simmer, stirring occasionally.  
  1. Once it’s simmering, lower the heat to low-medium and partially cover the pot. Let it cook for 35 minutes.  
  1. At 35 minutes into cooking, add the egg noodles. Let the noodles cook in the broth mixture for 10 minutes alongside the rest of the ingredients, stirring occasionally. 
  1. Once the chicken is tender and shreds easily with a fork, remove the lemon slices. 
  1. Check that the noodles are cooked al dente, as per package instructions. Once cooked, add the parsley to the soup, then stir.  
  1. Serve the soup warm and sprinkle the parmesan cheese on top. Enjoy with the family on a chilly winter day!
