Easy Homemade Watermelon Ice Cream Recipe (Only 3 Ingredients!)

Summer is a lovely period of time where we get to prioritize taking a break (for once!), and it’s also that time of year where we get to spend more time with family. 

Lazy summer days are anything but lazy, with everyone running around outside either at the park, at the pool, or near a mountain after a hike. Not to mention all the food-centered gatherings, like summer BBQs, where all the food is delicious but can get a little heavy. Planning summer activities and finding creative ways to curb sugar intake can get a little tiring. 

When you feel like staying at home or making a sweet treat that’s both light and indulgent, try making this mouth-watering watermelon ice cream — with only 3 ingredients! Bonus: it’s only got 7 grams of sugar per serving. 
 

Ingredients: 

3 cups watermelon, sliced 

1 scoop (55 mg) KAL® Sure Stevia™ Powder 

1/2 cup coconut milk 

 

Tools needed: 

Baking tray 

Parchment paper or aluminum foil 

Food processor 

Rubber spatula 
 

*yields 4 servings 
 

Instructions: 

  1. Slice the watermelon into cubes and freeze in a single layer on a piece of parchment paper or foil for 3-4 hours. 
  2. Add half of the watermelon to the food processor and blend until smooth. 
  3. Scrape down the sides with a rubber spatula and add KAL’s Sure Stevia™, the coconut milk, and the remaining watermelon and blend until smooth and creamy. 
  4. Enjoy immediately! Or freeze for 2-3 hours for a firmer texture. If frozen for longer, defrost for 30 minutes before serving.
